salvation. Khao Pad Sapparot (Pineapple Fried Rice) is a delicious, sweet-and-
savory masterpiece that transforms that cold rice into something fluffy, flavorful,
and visually spectacular.
This recipe is a masterclass in fried rice technique: the cold, day-old rice is
mandatory. It ensures your final dish is fluffy, not mushy, and allows the high
heat of the wok to impart that desirable, slightly charred texture known as Wok
Hay. The sweet pineapple, curry powder, and cashews make this
a complete meal for one.
1. Your Mise en Place
The Base:
Cold, Day-Old Jasmine Rice - 1 cup - CRUCIAL. Must be cold to prevent mushiness.
The Protein:
Cooked Chicken or Shrimp - 1/4 cup - Chopped into small pieces.
The Fruit:
Cubed Fresh Pineapple - 1/2 cup - Do not use canned, use fresh for best texture.

2.1 The Solo Sauce Strategy: In a small bowl, whisk together the soy sauce, fish
sauce, curry powder, and sugar. This is your one-shot flavoring system.
2.2 Rice Readiness: Ensure your rice is cold. Break up any large clumps with your
hands before starting. Slice the pineapple, chicken/shrimp, and green onion.
3. The Stir-Fry Climax (The Fluff and Fry).
